Vinification

The harvest usually begins by the end of September first decade of October, depends also on the climate, also have to be carefull that the acidity is preserved.
Immediately the grapes are taken to the cellar where it follows an attentive vinification by a soft pressing, the must goes into fermentation for 40 days with a controlled temperature. The wine then refines in steel tanks for 8 months and finally in bottles for about 4 months.
The wine goes on the market a year after the harvest.
